Creative Cooking for Colitis by Angela Breidenbach

April seems to be the month for me to review books and sometimes there is a bonus for you wonderful blog readers.

Creative Cooking for Colitis has 25 tips to help you eat without fear. Breindenbach also includes a ‘difficult foods’ list to help you avoid a flare-up.

The recipes look delicious and look simple enough for the most fatigued person to make. I didn’t get to make a real recipe yet, but I discovered an amazing way to make potatoes easier to peel. My household will be much happier to have real potatoes again instead of the box kind. I did make the Hydration Shake, super easy and hey who doesn’t want to drink a shake and with a name like Hydration Shake it screams, “good for you!”

I must eat gluten free meals and most of these recipes are easy to adapt or already gluten free.

Did you know you can eat Nachos and Mexican Lasagna? You can if you have this cookbook. Briendbach shows you how! Suffering from colitis herself she understands the desire to eat good food. Her hope is that this cookbook will help bring others dinner time enjoyment.

  2. I had a chuckle with Diana as we prepared for this blog post together. I had to admit that it was my husband, Mike, who actually came up with the easier way to make hash browns and peel potatoes! After getting married, he asked me if I'd like breakfast one day. I watched him make the potatoes and about fell off the kitchen stool at the simplicity! Go figure a simple recipe comes from a guy's bachelor days, lol. He still makes them for me often and I am always appreciative of his ingenuity.
