Grilled Cheese Gluten-Free

It’s here! April has arrived!
It’s not about the spring flowers and blooming trees for me.
No! It’s grilled cheese month! That means they are in season right? So one should eat them as often as possible in April.
Having to eat gluten-free was awful for a long time until I found a bread, Rudi’s that made a delicious grilled delicacy.
I’m a purist with my grilled cheese sandwiches. Two piece of they yellow processed cheese is my all time favorite.
I have made them with Provolone and Havarti cheese or sandwiched bacon, or thinly sliced meatloaf slid between the cheese slices. They were good but not as good as the real grilled cheese sandwich.
The one that got me through breakups in high school, college study sessions (ugh math), and pregnancy!
So celebrate with me. How do you like your grilled cheese sandwich?

You would have to do this post today, while it is overcast, raining and chilly–grilled cheese weather-oh and yest, with tomato soup. Excuse me while I go make one…..mmmm.

Yummy! Love grilled cheese! I make it just like Elaine except I may make it with cheddar or American.
I haven't had a grilled cheese sandwich in ages but like you, they have carried me through many a traumatic moment in my life. Although, I think now I would prefer really crusty bread (sorry, know you can't have) and some sharper cheese than the ole standby American. I'm so hungry now!

Mmmm. Excuse me while I go and make one. What got me through uni was the open sandwich style, a slice of bread with cheese and tomato cooked in a toaster oven. I don't think we had the sandwich presses back then, or at least I didn't.

One of my favorite comfort foods with tomato soup. Yum! Now I'm hungry! 🙂
Ah, my soup of choice was Campbells Bean with bacon. Can't have that any more.
Yum, I have these about 2-3 nights a week. I like them with American Cheese, buttered bread, and mashed flat in the skillet, with cheese oozing out all around … with a side order of nachos!
OH YES! I forgot to mention the smashing part. I had one for lunch it was sooo good.
