Gluten Free Friday
This week I thought I would make a taco salad so I pulled out a package of meat from the freezer to thaw. I didn’t check the labeling or this happy accident wouldn’t have occurred.
It was Italian Sausage.
I made the salad and changed my spices. It turned out delicious and a nice change from the norm.
Spicy Sausage Salad for two
1/2 pound Italian sausage
1/2 onion-diced
1/2 green pepper-diced
1 large garlic clove diced
2 tsp. Penzeys Northwoods Fire seasoning *if you don’t have this try 1 tbl. ground cumin, 1/2 tablespoon of salt and pepper, 1/2 tbl. of chili powder
3 mushrooms-chopped
1 head of lettuce–cut it small
1 cup Sargento 4 blend Mexican Cheese
Cook the Italian sausage, drain. Put it back in the pan
Add:
onion, green pepper, mushrooms and garlic cook about 5 minutes
Add:
Penzeys Northwoods Fire Seasoning Or the alternative spices.
Stir it and let it cook about 1 minute s the spices get to work.
Put the lettuce in two bowls
Add half the meat mixture to each bowl
Top each with 1/2 cup of cheese.
Serve with gluten free tortilla chips

This looks great! We eat “reduced-sodium” as well as gluten free at our house, and I think this can work with a bit of tweaking. Looking forward to trying it!
Kathy, that's hard to have 2 things to watch for when you are cooking. Maybe you can find reduced-sodium Kielbasa?

Neat. We'll have to try that. We're making taco salad tonight as it happens, but the hamburger is already thawed. Next time we'll thaw Italian sausage (we have some of that in the freezer) and try your recipe.
