When I found out I had to eat gluten-free I didn’t know how I would cope or even what I could eat.

Gluten-free Girl by Shauna James Ahern –read this you’ll feel much better. You’ll soon find out you’ve been given a choice to moan and groan or to enjoy the adventure of learning  a new way to eat. And yes the food is good. Her book is more about living gluten-free than recipes, though there are some in here. She’s writing a cookbook that should be out soon. I’ll be getting it since the recipes on her blog are delicious.

SCRIVENER FOR FOODIES

I’m a total Scrivener fan-girl, so I was more than a little excited when I saw that the programmers had included a recipe template in a recent upgrade (both Mac and Windows) of this popular writing software.

I was even more excited when Diana asked me to share a little about it here. (Thanks for having me!)

The template is set up so that you can label each recipe with a cook time (e.g. 0-30 mins, 30-60 mins), and a ranking (from “Untried” up to five stars). Of course, you can change these fields. I could see tracking difficulty level, recipe source, number of servings, or best season to make.

Anything you can’t put into those two fields can go in the Synopsis section, the Document Notes, or Keywords. In fact, keywords are already in place for things like allergens, cooking method, cuisine type, holiday, and season.

If you copy a recipe from the web, you can jot down the address in the Synopsis or Notes, or you could add it in the document References. If you have the Mac version, check out the Custom Meta-Data tab. It’s set up for things like Source, Calories, Fat, etc.

You don’t have to be writing a cookbook to apply all the great features of Scrivener—organization, labeling, easy searches, a place for notes and research—to your recipe box. But, when you’re done getting it all sorted out, it’ll be a cinch to share with friends and family.

And speaking of recipes, here’s one that I love to whip up on a busy evening when I don’t have a lot of time. This family favorite is easily adapted for many types of diets, including our transition to plant-based meals last year. Enjoy!

Taco Soup

Servings: ~ 8 cups

Time: 20 minutes

Ingredients

½ c chopped onion
1 can corn, undrained
2 cans diced tomatoes, undrained
1 can diced green chiles, undrained
1 can Ranch Style beans, undrained (or an extra can of pinto beans)
1 can Pinto beans, undrained
2 tsp liquid smoke (optional)
1 lb browned ground beef or chicken strips (optional)

Seasoning mix (see below) or 1 packet taco seasoning and 1 packet ranch dressing mix

Seasoning mix:

2 tsp paprika
1 ½ tsp salt
1 ½ tsp onion powder
1 tsp. chili powder
1 1/2 tsp. cumin
1 tsp garlic powder
1 tsp dried parsley
½ tsp dried dill
½ tsp dried basil
½ tsp black pepper

Directions

1. If desired, sauté the onion in a large pot before adding the other ingredients.

2. Mix all ingredients together in the pot and simmer until heated through. If it’s thicker than you’d like, add water ¼ cup at a time. The longer it simmers, the better it tastes.

3. Serve with tortilla chips or torn up corn tortillas.

NOTE: Can also be made in a crockpot on high setting for four hours or low setting for eight hours.

I love this time of year, but what can I safely eat?
Holidays are always a bit scary when treats are offered and you have allergies.

For me I have a few favorites and those are the treats I want to give out at trunk-or-treat. I admit it, I snack on the candy that night too. So I love it when I find a list like the one below. Life is so much sweeter when you can eat candy and not get sick.

Jen says to be aware! Some of this candy is made in a dedicated gluten free facility and some is not.  Please read the packaging to determine which candy is the most appropriate for your family.  Example:  Brach’s Candy Corns – these are not made with gluten-containing ingredients, however, they are made in a facility that processes wheat.  You will need to decide what level of precautions your family takes when it comes to gluten.  Some of you will eat candy as long as it isn’t made with wheat, barley or rye.  Others need a dedicated facility.

Pinterest Fail?

Mozzarella Sticks Found on Pinterest

I’ve been craving mozzarella sticks for months. That warm gooey cheese with marinara sauce is something I haven’t been able to replicate in a gluten free form. 

When I saw this recipe on Pinterest I had to give it a try.
I dipped the string cheese in milk and then rolled them in gluten free bread crumbs I had made.

This is how they turned out.

They tasted great–I think, but it’s been so long I’m not a good judge. 

I can’t say that pinterest failed me, but I’m not happy with the results.

I couldn’t get the bread crumbs to stick.

Can someone tell me a better way to do this?

Here’s my Marinara Recipe

2 small cans tomato sauce
1 14.5 oz. can Fire Roasted Diced tomatoes (I use Muir Glen with garlic)
1 tablespoon sea salt
1 tablespoon Italian seasoning

Put it all in a pan and let it simmer about 20 min.

Makin’ Salsa GF and EASY

Author: Diana Lesire Brandmeyer
Ingredients
  • 1 can original rotel
  • 1 can mild rotel
  • 1 large can of diced tomatoes
  • 1 tsp salt
  • 1/2 tsp sugar
  • Fresh cilantro to taste. ( I use 1/2 of the bunch of cilantro)
Instructions
  1. Put it all in food processor until it is the consistency that you want.
  2. Makes about 45 oz.
  3. Store in the fridge.

National Chili Month is here!

Chili Cook-Off

Award Winning Chili Johnsonville Brats

Where I live October means Chili-Cook Off time in downtown Belleville, Illinois. 
The main street is closed on Friday night and Saturday. Booths are erected and civic and church groups battle it out for the title of best chili.
I found out that booth 44 would have gluten free cupcakes, chili and CRACKERS! Oh my! Friday came and so did the rain. I didn’t care I wanted to eat street food like everyone else.
We walked through the pouring rain to booth 44 to find it CLOSED. Such sadness you can’t imagine. 
We don’t live far from Belleville so we went back Saturday afternoon. 
Ed had regular chili.

Isn’t that a cute cupcake? 
It was so good I went back and bought another one. Thank you Peace Lutheran for thinking about people who must eat gluten free.

Yum Coconut Joy Bites Gluten Free

Gluten Free Love

Recipe adapted from CheekyKitchen!

I saw this yummy love over on CheekyKitchen’s blog and had to make it.
Here’s my version:
Prep time 15 min.

Servings 12
Ingredients
1/4 cup raw almonds
3 tablespoons corn syrup
1 1/2 cups powdered sugar
2 cups ORGANIC shredded coconut
1 tablespoon melted coconut oil
1 teaspoon vanilla extract
1 1/2 cups milk chocolate
Preheat the oven to 350 degrees. Spread the almond o a baking sheet and bake in a preheated oven for about 10 min.
In a large bowl, stir together corn syrup, powdered sugar, melted butter, , shredded coconut and vanilla extract to form a thick paste.
Moisten hands slightly and form mixture into small cubes or roll into balls. place on a sheet of parchment paper.
In a medium, microwave safe bowl, melt chocolate by microwaving it at 15 second intervals, stir each time  until it is smooth and melty.
Dip the coconut squares into the melted chocolate. Spread around the entire thing. Press a toasted almond into the top and allow to dry completely before serving.
Allow to cool at room temperature until chocolate hardens.
My Notes!
I had to add quite a bit more coconut oil.  I felt it needed more syrup to make it stick together. I found putting them in the freezer for a few minutes before dipping them to be a good idea.

Easy Meal Planning

Can You make a Meal Plan Every Week?

Are you good at making weekly meal plans? 
I’m envious of those who write their weeks worth of meals on a blackboard. It’s not that I can’t plan a menu, more that I forget to do it. 
A friend, Jennifer Tiszai told me about EMEALS. I was skeptical about signing up, having someone plan my gluten free meals. 
EMEALS has several plans, from low carb to gluten free. You even get to pick the store you shop at the most.
I’ve been using the gluten free meal plan any-store since March. It has saved us a lot of money. The meals for the week tend to use the same ingredients. Which means that container of sour cream you bought for one meal gets used in several instead of it being tossed in the trash in a few weeks. 
Even Dave Ramsey has approved of this system. 
I asked if I could share one of my favorite recipes and they said yes.
Home-Style Skillet
1 lb red potatoes, cubed
(3T water)
1 lb smoked turkey kielbassa, cut into 1/4″ slices
1/2 cup chopped onions
(1 T Olive Oil)
(2Tcider vinegar)
(2 T brown sugar)
(2 T Dijon Mustard)
(1/2 t thyme)
(1/4 t pepper)
(4 cups baby spinach)
Place potatoes and water in a microwave-safe dish. Cover and microwave on high for 4 minutes or until tender, draining.

Add potatoes; sauté 3-5 minutes more or until kielbasa  and potatoes are lightly browned.

Combine brown sugar, vinegar, mustard, time and pepper, stir into skillet. Bring to a boil. Reduce heat; summer, uncovered, for 2-3 minutes or until heated through add spinach;

This dish is going to become one of our favorite comfort foods. It’s a perfect fall/winter/early spring meal.

Spicy Sausage Salad Gluten Free

Gluten Free Friday

This week I thought I would make a taco salad so I pulled out a package of meat from the freezer to thaw. I didn’t check the labeling or this happy accident wouldn’t have occurred.

It was Italian Sausage.

I made the salad and changed my spices. It turned out delicious and a nice change from the norm.

Spicy Sausage Salad for two
1/2 pound Italian sausage
1/2 onion-diced
1/2 green pepper-diced
1 large garlic clove diced
2 tsp. Penzeys Northwoods Fire seasoning *if you don’t have this try 1 tbl. ground cumin, 1/2 tablespoon of salt and pepper, 1/2 tbl. of chili powder
3 mushrooms-chopped
1 head of lettuce–cut it small
1 cup Sargento 4 blend Mexican Cheese

Cook the Italian sausage, drain. Put it back in the pan
Add:
onion, green pepper, mushrooms and garlic cook about 5 minutes
Add:
Penzeys Northwoods Fire Seasoning Or the alternative spices.
Stir it and let it cook about 1 minute s the spices get to work.

Put the lettuce in two bowls
Add half the meat mixture to each bowl
Top each with 1/2 cup of cheese.

Serve with gluten free tortilla chips

Don’t Photoshop Me!

Flipping through magazines while waiting for my hairstylist often makes me sad. I look at the photos of perfect bodies and hair and wonder why I can’t achieve it, no matter how hard I try.

Conversations with my stylist are enlightening. The hair is seldom real, extensions are added along with tons of product to hold the hair in shape during a shoot.

Photoshop is often always used to make those bodies a bit tanner and thinner.

What message is being sent to young girls? Or even older women?
We aren’t good enough as we are. Even Christian women who know in our hearts that God created us, we are beautiful and wonderfully made, still think what we look like now can’t be what He desires.

So we tan, eat less, schedule another exercise class and maybe loose a few pounds.
Then we fall into a funk.

Why? Because we still don’t look like the magazine ads, the commercials or our favorite star.

A friend of mine produced this video as a class project. It’s worth watching and not just once. Show it to your daughters and your friends. Get into a discussion about what real people are supposed to look like.
